Add sugar to whites of eggs and beat until stiff and frothy.
Add yolks - one at a time - slowly to whites.
Add cake meal. Mix matzo meal with apples to absorb moisture.
Add apple mixture and nuts.
Add juice and rind.
Pour into spring pan. Bake 45 minutes to an hour at 375 degrees. Cake will brown nicely. Let cool. Do not invert.
Dust with powdered sugar, if desired.
