Bubbe's Passover Banana Cake

Ingredients
7 eggs, separated
1 cup sugar
¼ teaspoon salt
¾ cup matzo cake meal
¼ cup potato starch
1 cup very ripe mashed bananas
½ cup finely chopped walnuts

Beat egg whites until stiff.

Add sugar slowly and beat until sugar is dissolved.

Beat egg yolks with salt until thick.

Blend sifted matzo cake meal and potato starch, bananas, and nuts into egg mixture.

Pour into ungreased 9-inch tube pan.

Cut through batter with spatula to work out air bubbles.

Bake in moderate oven (325 degrees) for 45-50 minutes or until top springs back when touched with finger.

Invert cake until cool (1 hour). Remove from pan.
