Soft Carrot Cookies

Ingredients
1 large carrot, grated (a heaping half-cup)
1/4 cup and 2 tsp margarine;
1 egg
1 cup brown sugar
1/4 cup raisins (or to taste)
1 1/2 cups flour
1/2 tsp vanilla
1 tsp baking powder
1/4 tsp ea cinnamon, nutmeg, allspice, and ground ginger
1 tsp lemon extract
1 pinch salt
1 tsp crushed fresh ginger (optional).

Preheat the oven to 375. Melt the margarine gently, and stir in the sugar and flavorings. When well-blended, add the egg and carrot and mix thoroughly. Add the baking powder and flour and mix to a soft dough. Let sit 15 min, just to cool down a bit.

I measured out tablespoonfuls, rolled them into balls, dunked them into sugar with lemon peel and diced candied ginger in it, and baked them for 15 minutes, at the end of which they were a teeny bit burnt. So, next time, I'll try 13 minutes.
