Grate potatoes, onions, and carrots. I peel and cut up the vegetables, keeping them in a bowl of cold water, then grate them in a blender. Drain, but keep the starch by placing the colander over a shallow plate, then pouring off the water from the plate. Combine drained vegetables and starch, bread crumbs, salt, pepper, beaten eggs, and oil. Stir well.
Pour into well-greased 9x12 pan. Bake for 1 hour at 375 degrees. Bake only about 45 minutes if you want to prepare the kugel ahead of time and finish baking it just before serving.
