Bubbe's Passover Sponge Cake

(The cake comes out better if prepared with a stationary mixer)

Ingredients
8 or 9 eggs, separated
1 ½ cups sugar
¾ cup potato starch
3 tablespoons matzo cake meal
Juice & rind of 1 lemon

Beat egg whites until stiff.

Add sugar slowly and beat until sugar is dissolved.

Beat yolks until they are lemon colored and thick.

Slowly add beaten egg yolks to egg whites mixture, with mixer set at lowest speed.

Continue beating at lowest speed while adding juice and rind, then add cake meal and starch, which have been sifted together.

Pour into ungreased 9" tube pan and bake at 325 degrees for one hour. Cool and invert.
